Chicken tagine recipe with lemon
Here’s a simple recipe for chicken tagine with lemon:
Ingredients:
- 4 chicken thighs
- 2 onions
- 3 cloves of garlic
- 1 preserved lemon
- 1 teaspoon of turmeric
- 1 teaspoon of paprika
- 1 teaspoon of cumin
- 1/2 teaspoon of ground ginger
- 1/2 bunch of fresh cilantro
- 2 tablespoons of olive oil
- Salt and pepper
- 1/2 cup of water
Instructions:
- Peel and slice the onions and garlic. Sauté them in a tagine or a large pot with olive oil until golden brown.
- Add the spices (turmeric, paprika, cumin, ginger) and mix well.
- Add the chicken thighs and brown them on each side.
- Cut the preserved lemon into small pieces and add them to the tagine with the chopped cilantro. Mix well.
- Pour in the 1/2 cup of water and simmer on low heat for about 45 minutes.
- Check the chicken for doneness by poking it with a fork – the meat should be tender and fall off the bone easily.
- Serve hot with couscous or bread.
